• 8 Teaspoons (1 stick) unsalted butter, melted and divided
  • 2 Cups all-purpose flour
  • 3 Tablespoons plus 2 teaspoons granulated sugar, divided
  • 2 Teaspoons baking powder
  • 1 Tsp. baking soda
  • 1/2 Tsp. salt
  • 2 Teaspoons plus 1/2 teaspoon cinnamon, divided
  • 2 large eggs
  • 1 1/2 Cups full fat buttermilk
  • 1 Cup full fat ricotta cheese
  • 1 Tsp. vanilla extract
  • 1/2 Cup Driscoll’s Raspberries
  • 1/2 Cup Driscoll’s Blueberries
  • 1/2 Cup Driscoll’s Blackberries
  • 1 Tbsp. confectioner’s sugar
  • Maple syrup
  1. PREHEAT oven to 400˚F.
  2. LINE an 18-inch by 13-inch baking sheet with parchment paper.
  3. BRUSH parchment paper and sides of baking sheet with 1 tablespoon melted butter.
  4. PLACE 2 cups all-purpose flour into a large bowl.
  5. ADD 3 tablespoons granulated sugar and 2 teaspoons baking powder.
  6. ADD 1 teaspoon baking soda, 1/2 teaspoon salt, and 1/2 teaspoon cinnamon.
  7. WHISK to combine ingredients.
  8. SET ASIDE flour mixture.
  9. CRACK 2 large eggs into a medium bowl and WHISK thoroughly.
  10. ADD 1 ½ cups buttermilk, 1 cup ricotta cheese, and 1 teaspoon vanilla extract.
  11. WHISK to combine ingredients.
  12. POUR egg mixture over flour mixture.
  13. WHISK until somewhat smooth.
  14. WHISK in 6 tablespoons melted butter and RESERVE 1 tablespoon butter for end of baking.
  15. PLACE 1/2 cup raspberries into a medium bowl.
  16. ADD 1/2 cup blueberries and 1/2 cup blackberries.
  17. SPRINKLE 1 tablespoon confectioner’s sugar over berries and TOSS gently until berries are coated.
  18. FOLD berries gently into batter.
  19. POUR batter into prepared baking sheet and SMOOTH into an even layer.
  20. BAKE 14 – 16 minutes or until batter appears set and fluffy to the touch.
  21. REMOVE pancake from oven SET oven broiler to high.
  22. BRUSH pancake with remaining 1 tablespoon butter.
  23. PLACE 2 teaspoons granulated sugar into a small bowl.
  24. ADD 2 teaspoons cinnamon.
  25. STIR to combine and SPRINKLE over pancake.
  26. RETURN pancake to oven and BROIL for about 2 minutes or until the top is golden brown.
  27. SERVE immediately with extra berries and maple syrup.
