Ingredients
- 1/2 cup walnuts, chopped
- 1 package (6 ounces) Driscoll's Raspberries
- 1/2 teaspoon lemon juice (optional)
- 2 cups nonfat Greek yogurt
- 1/2 teaspoon cinnamon
- 2 tablespoons dark chocolate chips or chunks
Directions
- PLACE 1/2 cup chopped walnuts into a skillet.
- COOK over medium heat and SHAKE pan frequently until walnuts are golden and fragrant, about 5 minutes.
- SET ASIDE toasted walnuts to cool.
- PLACE half of 1 package (6 ounces) raspberries into a medium bowl and RESERVE remaining raspberries.
- ADD 1/2 teaspoon lemon juice to bowl of raspberries (optional).
- MASH raspberries with a large spoon or potato masher until pureed.
- SET ASIDE raspberry puree.
- PLACE 2 cups nonfat Greek yogurt into a medium bowl.
- ADD 1/2 teaspoon cinnamon.
- STIR to combine.
- DIVIDE half of yogurt mixture evenly between 2 parfait or wine glasses.
- DIVIDE half of raspberry puree between parfaits.
- SPRINKLE 1/2 tablespoon dark chocolate chips or chunks over each parfait.
- SPRINKLE 2 tablespoons toasted walnuts over each parfait.
- DIVIDE remaining raspberry puree evenly between parfaits.
- DIVIDE remaining yogurt mixture evenly between parfaits.
- SPRINKLE half of remaining dark chocolate chips or chunks over each parfait.
- SPRINKLE half of remaining toasted walnuts over each parfait.
- GARNISH with reserved fresh raspberries.
- SERVE immediately.
