• 1 Package (6 ounce) Driscoll’s Raspberries
  • 1 Tbsp. plus 2 teaspoons honey, divided
  • 2 Teaspoons fresh lime juice
  • 1 Cup plain Greek yogurt
  • 1 Cup purchased lemon pound cake, cubed
  • Fresh mint leaves (optional)
  1. PLACE 1 package raspberries into a medium bowl.
  2. ADD 1 tablespoon honey and 2 teaspoons lime juice.
  3. STIR gently to coat raspberries.
  4. ALLOW raspberry mixture to rest 15 minutes or until syrup develops.
  5. DIVIDE 1 cup yogurt between four small jars.
  6. DRIZZLE each parfait with 1/2 teaspoon of remaining honey.
  7. DIVIDE 1 cup cubed pound cake between jars.
  8. TOP each parfait with a heaping portion of raspberries.
  9. GARNISH with mint if desired.
  10. SERVE Simple Raspberry Parfait immediately.
