Easy Raspberry Parfaits

Ingredients
- 1 Package (6 ounce) Driscoll’s Raspberries
- 1 Tbsp. plus 2 teaspoons honey, divided
- Fresh mint leaves (optional)
- 2 Teaspoons fresh lime juice
- 1 Cup plain Greek yogurt
- 1 Cup purchased lemon pound cake, cubed
Directions
- PLACE 1 package raspberries into a medium bowl.
- ADD 1 tablespoon honey and 2 teaspoons lime juice.
- STIR gently to coat raspberries.
- ALLOW raspberry mixture to rest 15 minutes or until syrup develops.
- DIVIDE 1 cup yogurt between four small jars.
- DRIZZLE each parfait with 1/2 teaspoon of remaining honey.
- DIVIDE 1 cup cubed pound cake between jars.
- TOP each parfait with a heaping portion of raspberries.
- GARNISH with mint if desired.
- SERVE Simple Raspberry Parfait immediately.
