Blueberry Bruschetta

Ingredients
- 1/4 cup fresh basil leaves
- 1/4 cup roasted salted pistachios
- 1 loaf ciabatta or 1 baguette
- 1/8 small red onion
- 4 tablespoons olive oil, divided
- 1 package (6 ounces) Driscoll’s Blueberries
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/8 teaspoon freshly cracked black pepper
- 8 ounces burrata or fresh mozzarella
- Assorted crackers (optional)
Directions
- STACK 1/4 cup fresh basil leaves into a single stack.
- ROLL leaves into a tube.
- SLICE tube into strands diagonally using a very sharp knife.
- SET ASIDE basil chiffonade.
- CHOP 1/4 cup roasted salted pistachios and SET ASIDE.
- PREHEAT a large skillet to medium heat.
- SLICE 1 loaf ciabatta or 1 baguette into 3/4-inch slices.
- BRUSH bread slices lightly with olive oil on both sides.
- PLACE bread slices into skillet and COOK just until lightly golden, 1 – 2 minutes.
- FLIP bread slices and COOK just until lightly golden, 1 – 2 minutes.
- SET ASIDE toasted bread slices until needed.
- PREHEAT a medium saucepan over medium low heat.
- SLICE 1/8 small red onion into thin slices and SET ASIDE.
- POUR 2 tablespoons olive oil into sauce pan.
- ALLOW oil to heat just until shimmering. Do not overcook.
- ADD onion slices.
- COOK and STIR occasionally until softened, 2 – 3 minutes.
- ADD 1 package (6 ounces) blueberries.
- ADD 1 tablespoon balsamic vinegar.
- ADD 1 tablespoon honey.
- ADD 1/2 teaspoon salt.
- ADD 1/8 teaspoon freshly cracked black pepper.
- COOK and STIR occasionally until blueberries burst, 5 – 6 minutes.
- TASTE blueberry mixture and ADD salt and ADD balsamic vinegar as desired.
- ALLOW blueberry mixture to cool completely.
- PLACE 8 ounces burrata or fresh mozzarella onto a serving dish and DIVIDE into small pieces.
- DRIZZLE lightly with 1 – 2 tablespoons olive oil.
- SPOON blueberry mixture over cheese.
- SPRINKLE basil chiffonade over cheese.
- SPRINKLE chopped pistachios over cheese.
- ARRANGE toasted bread slices around cheese.
- ARRANGE assorted crackers around cheese if using.
- SERVE immediately.
