Berry Sheet Pancakes

Ingredients
- 8 Teaspoons (1 stick) unsalted butter, melted and divided
- 2 Cups all-purpose flour
- 3 Tablespoons plus 2 teaspoons granulated sugar, divided
- 2 Teaspoons baking powder
- 1 Tsp. baking soda
- 1/2 Tsp. salt
- 2 Teaspoons plus 1/2 teaspoon cinnamon, divided
- 2 large eggs
- 1 1/2 Cups full fat buttermilk
- 1 Cup full fat ricotta cheese
- 1 Tsp. vanilla extract
- 1/2 Cup Driscoll’s Raspberries
- 1/2 Cup Driscoll’s Blueberries
- 1/2 Cup Driscoll’s Blackberries
- 1 Tbsp. confectioner’s sugar
- Maple syrup
Directions
- PREHEAT oven to 400˚F.
- LINE an 18-inch by 13-inch baking sheet with parchment paper.
- BRUSH parchment paper and sides of baking sheet with 1 tablespoon melted butter.
- PLACE 2 cups all-purpose flour into a large bowl.
- ADD 3 tablespoons granulated sugar and 2 teaspoons baking powder.
- ADD 1 teaspoon baking soda, 1/2 teaspoon salt, and 1/2 teaspoon cinnamon.
- WHISK to combine ingredients.
- SET ASIDE flour mixture.
- CRACK 2 large eggs into a medium bowl and WHISK thoroughly.
- ADD 1 ½ cups buttermilk, 1 cup ricotta cheese, and 1 teaspoon vanilla extract.
- WHISK to combine ingredients.
- POUR egg mixture over flour mixture.
- WHISK until somewhat smooth.
- WHISK in 6 tablespoons melted butter and RESERVE 1 tablespoon butter for end of baking.
- PLACE 1/2 cup raspberries into a medium bowl.
- ADD 1/2 cup blueberries and 1/2 cup blackberries.
- SPRINKLE 1 tablespoon confectioner’s sugar over berries and TOSS gently until berries are coated.
- FOLD berries gently into batter.
- POUR batter into prepared baking sheet and SMOOTH into an even layer.
- BAKE 14 – 16 minutes or until batter appears set and fluffy to the touch.
- REMOVE pancake from oven SET oven broiler to high.
- BRUSH pancake with remaining 1 tablespoon butter.
- PLACE 2 teaspoons granulated sugar into a small bowl.
- ADD 2 teaspoons cinnamon.
- STIR to combine and SPRINKLE over pancake.
- RETURN pancake to oven and BROIL for about 2 minutes or until the top is golden brown.
- SERVE immediately with extra berries and maple syrup.
