Crust
  • 3 Cups rolled oats
  • 1 Cup sweet rice flour
  • 3/4 Cup cane sugar
  • 1/2 Cup plus 2 tablespoons chopped almonds, divided
  • 2 Teaspoons baking powder
  • 1/2 Tsp. cinnamon
  • 1/4 Tsp. salt
  • 1 Cup non-dairy butter
  • 3 Teaspoons maple syrup
  • 3 Tablespoons almond butter
  • 1 Tsp. vanilla extract
  • 1/2 Tsp. almond extract
  • Non-dairy vanilla ice cream (optional)
Raspberry Jam Filling
  • 4 Packages (6 ounces each) Driscoll’s Raspberries
  • 1/3 Cup peeled apple, finely diced
  • 3 Tablespoons agave nectar or agave syrup
  • 2 Tablespoons cane sugar
  • 1 Tbsp. fresh lemon juice
  • 1 Tsp. lemon zest
  • 5 Tablespoons chia seeds
Raspberry Filling
  1. PLACE raspberries, apple pieces, agave nectar, sugar, lemon juice, and lemon zest into a small saucepan.
  2. COOK over medium heat until raspberry mixture begins to boil.
  3. REDUCE heat to medium-low.
  4. SIMMER raspberry mixture for 10 minutes while occasionally STIRRING and MASHING.
  5. REMOVE raspberry mixture from heat.
  6. STIR in chia seeds.
  7. SET ASIDE raspberry jam to cool and thicken.
Crust
  1. PREHEAT oven to 350°F.
  2. LINE an 8-inch x 8-inch baking dish with parchment paper.
  3. PLACE oats, rice flour, sugar, ½ cup chopped almonds, baking powder, cinnamon, and salt into bowl of a food processor.
  4. PULSE oat mixture until crumbly.
  5. ADD butter, maple syrup, almond butter, vanilla extract, and almond extract.
  6. CONTINUE PULSING oat mixture until ingredients are well incorporated.
  7. TRANSFER dough to a large mixing bowl.
  8. KNEAD dough lightly.
  9. PRESS half of dough evenly into bottom of prepared baking dish.
  10. SPREAD raspberry jam over dough.
  11. SPRINKLE remaining dough over jam.
  12. BAKE 30 minutes.
  13. REMOVE baking dish from oven.
  14. SPRINKLE remaining 2 tablespoons chopped almonds over crust.
  15. RETURN baking dish to oven.
  16. BAKE an additional 6-8 minutes or until crust is golden brown.
  17. ALLOW to cool completely.
  18. SLICE into bars or squares.
  19. ENJOY oatmeal crumble bars with a scoop of non-dairy vanilla ice cream!
