Vegan Raspberry Oatmeal Crumble Bars

Ingredients
- 3 Cups rolled oats
- 1 Cup sweet rice flour
- 3/4 Cup cane sugar
- 1/2 Cup plus 2 tablespoons chopped almonds, divided
- 2 Teaspoons baking powder
- 1/2 Tsp. cinnamon
- 1/4 Tsp. salt
- 1 Cup non-dairy butter
- 3 Teaspoons maple syrup
- 3 Tablespoons almond butter
- 1 Tsp. vanilla extract
- 1/2 Tsp. almond extract
- Non-dairy vanilla ice cream (optional)
- 4 Packages (6 ounces each) Driscoll’s Raspberries
- 1/3 Cup peeled apple, finely diced
- 1 Tsp. lemon zest
- 5 Tablespoons chia seeds
- 3 Tablespoons agave nectar or agave syrup
- 2 Tablespoons cane sugar
- 1 Tbsp. fresh lemon juice
Directions
- PREHEAT oven to 350°F.
- LINE an 8-inch x 8-inch baking dish with parchment paper.
- PLACE oats, rice flour, sugar, ½ cup chopped almonds, baking powder, cinnamon, and salt into bowl of a food processor.
- PULSE oat mixture until crumbly.
- ADD butter, maple syrup, almond butter, vanilla extract, and almond extract.
- CONTINUE PULSING oat mixture until ingredients are well incorporated.
- TRANSFER dough to a large mixing bowl.
- KNEAD dough lightly.
- PRESS half of dough evenly into bottom of prepared baking dish.
- SPREAD raspberry jam over dough.
- SPRINKLE remaining dough over jam.
- BAKE 30 minutes.
- REMOVE baking dish from oven.
- SPRINKLE remaining 2 tablespoons chopped almonds over crust.
- RETURN baking dish to oven.
- BAKE an additional 6-8 minutes or until crust is golden brown.
- ALLOW to cool completely.
- SLICE into bars or squares.
- ENJOY oatmeal crumble bars with a scoop of non-dairy vanilla ice cream!
- PLACE raspberries, apple pieces, agave nectar, sugar, lemon juice, and lemon zest into a small saucepan.
- COOK over medium heat until raspberry mixture begins to boil.
- REDUCE heat to medium-low.
- SIMMER raspberry mixture for 10 minutes while occasionally STIRRING and MASHING.
- REMOVE raspberry mixture from heat.
- STIR in chia seeds.
- SET ASIDE raspberry jam to cool and thicken.
