This Strawberry Matcha Tiramisu blends the earthy flavor of matcha with sweet strawberry whipped cream and soft ladyfingers. Easy to prepare and stunning to serve, it's the perfect make-ahead dessert for spring and summer gatherings.

Ingredients
10 Driscoll’s Strawberries, divided
1/3 cup plus 1 teaspoon sugar, divided
1 teaspoon lemon juice
1 cup heavy cream
8 ounces mascarpone
1 ½ cups water
1 tablespoon plus 1/2 teaspoon matcha powder, divided
1 package ladyfinger cookies

STEM and PLACE 5 strawberries into a blender.

ADD 1 teaspoon sugar.

ADD 1 teaspoon lemon juice.

BLEND until strawberries are pureed.

SET ASIDE strawberry puree.

POUR 1 cup heavy cream into a large bowl or the bowl of a stand mixer fitted with the whisk attachment.

ADD remaining 1/3 cup sugar.

WHISK until stiff peaks form.

ADD strawberry puree.

ADD 8 ounces mascarpone.

FOLD gently until no streaks remain. Do not overmix.

SET ASIDE strawberry cream.

POUR 1 ½ cups water into a small saucepan.

COOK over high heat until boiling and REMOVE from heat.

ADD 1 tablespoon matcha powder, STIR until no clumps.

ALLOW matcha tea to cool to room temperature.

DIP each ladyfinger cookie into matcha tea 1 – 2 seconds and SET ASIDE.

ARRANGE half of dipped ladyfinger cookies in a single layer on the bottom of a glass serving dish.

SPREAD half of strawberry cream evenly over ladyfinger cookies.

COVER serving dish tightly with plastic wrap and refrigerate 4 – 5 hours or up to overnight.
