Mojito
  • 1/2 Cup water
  • 1/2 Cup sugar
  • 1/4 Cup edible dried hibiscus
  • 1 lime
  • 1 strawberries, hulled and sliced in half
  • 20 mint leaves
  • 4 Ounces gin
  • Crushed ice
  • 8-12 Oz. seltzer water
Garnish
  • 2 lime wheels, sliced thin
  • 2 strawberries
  • 2 mint sprigs
  1. POUR 1/2 cup water into a small saucepan.
  2. ADD 1/2 cup sugar and 1/4 cup dried hibiscus flowers.
  3. COOK over medium heat until sugar dissolves and STIR occasionally.
  4. SIMMER 2 –3 more minutes.
  5. REMOVE from heat and allow to STEEP and COOL 10 minutes.
  6. STRAIN hibiscus simple syrup into a pourable container and SET ASIDE in refrigerator to COOL. (Mixture can be stored in refrigerator for up to 2 weeks.)
  7. CUT 1 lime into 4 wedges and PLACE 2 wedges into each of two tall cocktail tumblers.
  8. ADD 4 strawberries, cut in half, to each glass.
  9. ADD 10 mint leaves to each glass.
  10. MUDDLE mixture well to crush ingredients and release juices and flavors.
  11. ADD 2 ounces gin (about 4 tablespoons) to each glass.
  12. ADD 2 – 3 tablespoons hibiscus simple syrup to each glass.
  13. ADD crushed ice to each glass and STIR.
  14. ADD 4 – 6 ounces seltzer water to each glass.
  15. GARNISH each glass with 1 lime wheel, 1 strawberry, and 1 mint sprig.
  16. SERVE the Strawberry Gin Mojitos immediately.
