Strawberry Gin Mojito Recipe

This gin mojito is fruity, fizzy, and overflowing with fresh strawberries and a hint of floral hibiscus. A welcome refresher on a warm afternoon!

Ingredients

Mojito

1/2 Cup water

1/2 Cup sugar

1/4 Cup edible dried hibiscus

1 lime

8 strawberries, hulled and sliced in half

20 mint leaves

4 Ounces gin

Crushed ice

8-12 Oz. seltzer water


Garnish

2 lime wheels, sliced thin

2 strawberries

2 mint sprigs


Directions

POUR 1/2 cup water into a small saucepan.

ADD 1/2 cup sugar and 1/4 cup dried hibiscus flowers.

COOK over medium heat until sugar dissolves and STIR occasionally.

SIMMER 2 –3 more minutes.

REMOVE from heat and allow to STEEP and COOL 10 minutes.

STRAIN hibiscus simple syrup into a pourable container and SET ASIDE in refrigerator to COOL. (Mixture can be stored in refrigerator for up to 2 weeks.)

CUT 1 lime into 4 wedges and PLACE 2 wedges into each of two tall cocktail tumblers.

ADD 4 strawberries, cut in half, to each glass.

ADD 10 mint leaves to each glass.

MUDDLE mixture well to crush ingredients and release juices and flavors.

ADD 2 ounces gin (about 4 tablespoons) to each glass.

ADD 2 – 3 tablespoons hibiscus simple syrup to each glass.

ADD crushed ice to each glass and STIR.

ADD 4 – 6 ounces seltzer water to each glass.

GARNISH each glass with 1 lime wheel, 1 strawberry, and 1 mint sprig.

SERVE the Strawberry Gin Mojitos immediately.
