Grilled Camembert with Blackberries and Mint

Chef Caroline Chambers invites you to try this creamy, jammy, smoky appetizer. It’s everything you want for a summery starter or party centerpiece. It takes just 10 minutes and looks wildly impressive. Make it for your next gathering or honestly just dinner for two with a glass of rosé.

Ingredients

1 baguette

3 tablespoons olive oil, divided

1 wheel (8 ounces) camembert

1 package (6 ounces) Driscoll’s Blackberries

1-2 tablespoons brown sugar

1/8 teaspoon flaky sea salt

2 tablespoons thinly sliced mint

Honey or balsamic glaze (optional)


Directions

PREHEAT grill to medium.

SLICE 1 baguette into 1-inch thick slices.

DRIZZLE 1 tablespoon olive oil over slices.

SET ASIDE baguette slices until needed.

BUTTER or OIL a large cast iron skillet.

RUB 1 tablespoon olive oil all over 1 wheel (8 ounces) camembert.

SLICE camembert wheel in half horizontally to form 2 wheels.

PLACE wheels into prepared skillet, rinds down.

SPREAD 1 tablespoon olive oil over tops of cheese.

DISTRIBUTE 1 package (6 ounces) blackberries over cheese.

SPRINKLE 1 – 2 tablespoons brown sugar over cheese.

SPRINKLE 1/8 teaspoon flaky sea salt over cheese.

PLACE skillet with camembert on grill.

ARRANGE baguette slices on grill.

CLOSE lid and COOK about 1 minute until baguette slices are golden.

FLIP baguette slices.

CLOSE lid and COOK about 1 minute until baguette slices are golden.

REMOVE baguette slices from heat.

CLOSE lid and COOK about 5 minutes until cheese is soft and jiggly.

ARRANGE baguette slices around cheese.

SPRINKLE 2 tablespoons thinly sliced mint over blackberries.

DRIZZLE with honey or balsamic glaze (optional).

SERVE immediately.

Pro tips

Cooking school: The brown sugar isn't just for sweetness. It helps the berries to caramelize slightly and creates an amazing jammy texture.

Love your leftovers: Leftover grilled camembert (if there is any) is incredible spread on toast for breakfast the next morning.

Quality matters! Use a really good quality camembert; it should feel soft when you press on it gently.
