Overnight Oats
  • 1/2 Cup rolled oats
  • 1/2 Cup milk
  • 1/4 Cup coconut yogurt
  • 1/4 Tsp. vanilla extract
  • 1 Tbsp. maple syrup
  • 1/3 Cup chopped Driscoll’s Strawberries
  • 1/3 Cup Driscoll’s Blueberries
  • 1 Tbsp. chia seeds
  • Granola for garnish
Strawberry Chia Seed Jam
  • Half of 1 package (16 ounces) Driscoll’s Strawberries, hulled and sliced
  • 2 Tablespoons maple syrup
  • 2 Tablespoons chia seeds
Overnight Oats
  1. PLACE 1/2 cup oats into a 12-ounce mason jar.
  2. ADD 1/2 cup milk, 1/4 cup coconut yogurt, 1/4 teaspoon vanilla extract, 1 tablespoon maple syrup, 1/3 cup chopped strawberries, 1/3 cup blueberries, and 1 tablespoon chia seeds.
  3. MIX well and ENSURE oats are completely covered.
  4. REFRIGERATE at least 4 hours or overnight.
Strawberry Chia Seed Jam
  1. PLACE half of package of strawberries into a medium saucepan.
  2. COVER saucepan with lid and COOK over high heat 2-3 minutes or until strawberries begin to break down.
  3. REMOVE lid.
  4. ADD 2 tablespoons maple syrup and 2 tablespoons chia seeds.
  5. ALLOW mixture to come to a boil.
  6. REDUCE heat to medium-high.
  7. MASH strawberries using a potato masher or immersion blender.
  8. REDUCE heat to medium and SIMMER for an additional about 5-8 minutes while STIRRING occasionally.
  9. ALLOW mixture to cool somewhat.
  10. TRANSFER mixture carefully to a mason jar.
  11. COVER jar with lid and REFRIGERATE overnight or until set.
  12. SERVE overnight oats garnished with strawberry chia seed jam, sliced strawberries, and your favorite granola.
