Ingredients
  • 2 Packages (6 ounces each) Driscoll’s Raspberries
  • 1 Cup full-fat coconut milk
  • 3 Tablespoons agave nectar or honey
  • 2 bananas, sliced and frozen
  • 4-5 fresh mint leaves, finely chopped
  1. PLACE raspberries into a blender.
  2. ADD coconut milk.
  3. ADD agave or honey.
  4. BLEND on high speed until berries are liquefied.
  5. ADD half of frozen banana slices.
  6. BLEND again on high speed until mixture swirls easily inside blender.
  7. ADD remaining banana slices.
  8. BLEND again on high speed until mixture swirls easily inside blender.
  9. POUR mixture into a mixing bowl.
  10. ADD mint.
  11. ADD chocolate chunks (if using).
  12. FOLD gently to incorporate ingredients.
  13. TRANSFER nice cream to a bread pan.
  14. CHILL in freezer for several hours or until firm.
  15. ALLOW to soften slightly before serving.
