Raspberry Simple Syrup
  • 1/2 Package of a 6 ounce package Driscoll's Raspberries
  • 1/2 Cup sugar
  • 1/2 Cup water
Cachaca
  • 6 Tablespoons Raspberry Simple Syrup
  • 1/2 Cup ice cubes
  • 6 Tablespoons white rum or cachaça
  • 1 1/2 Teaspoons fresh lime juice
  • 2 Tablespoons lemon-lime soda
  • 8-10 Driscoll's Raspberries
  • 4 large mint leaves
Raspberry Simple Syrup
  1. Combine 1/2 package raspberries, sugar and water in a small saucepan. Bring to a boil, stirring until sugar dissolves and berries soften. Cool. Strain and press berries to release juice. Discard pulp.
To Prepare
  1. Muddle raspberries, mint leaves, raspberry simple syrup in a cocktail glass using a muddler or flexible spatula.
  2. Add ice, white rum and lime juice. Top with soda. Stir and serve.
