Description
Simple syrup is a combination of water and sugar cooked until the sugar dissolves. It is handy to have around for making a batch of clear lemonade. Make more than you need and keep in the refrigerator for cocktails or to sweeten iced coffee or tea.
- 1/2 Cup sugar
- 2 Cups cold water, divided
- 1/2 Cup lightly packed fresh mint leaves
- 1 Cup fresh lemon juice
- 2 Packages (6 ounces) Driscoll's Blueberries, divided
- 1 Cup ice cubes
- Seltzer water (optional)

PLACE 1/2 cup sugar into a small saucepan.

ADD 1/2 cup water, 1 package blueberries, and 1/2 cup mint leaves.

BRING blueberry simple syrup to a simmer over medium heat and STIR occasionally until sugar dissolves, 3-6 minutes.

MASH berries gently with back of a wooden spoon.

REMOVE from heat and ALLOW to cool to room temperature.

STRAIN blueberry simple syrup through a fine mesh sieve into a tall pitcher and DISCARD solids.

STIR in 1 cup lemon juice.

STIR in remaining 1 ½ cup water and aside lemonade.

DIVIDE 1 cup ice cubes between 4 tall glasses.

TOP each glass with several blueberries.

DIVIDE lemonade between glasses.

TOP with seltzer water, if desired.

SERVE Blueberry Mint Lemonade immediately.
