• 1/2 Cup sugar
  • 2 Cups cold water, divided
  • 1/2 Cup lightly packed fresh mint leaves
  • 1 Cup fresh lemon juice
  • 2 Packages (6 ounces) Driscoll's Blueberries, divided
  • 1 Cup ice cubes
  • Seltzer water (optional)
  1. PLACE 1/2 cup sugar into a small saucepan.
  2. ADD 1/2 cup water, 1 package blueberries, and 1/2 cup mint leaves.
  3. BRING blueberry simple syrup to a simmer over medium heat and STIR occasionally until sugar dissolves, 3-6 minutes.
  4. MASH berries gently with back of a wooden spoon.
  5. REMOVE from heat and ALLOW to cool to room temperature.
  6. STRAIN blueberry simple syrup through a fine mesh sieve into a tall pitcher and DISCARD solids.
  7. STIR in 1 cup lemon juice.
  8. STIR in remaining 1 ½ cup water and aside lemonade.
  9. DIVIDE 1 cup ice cubes between 4 tall glasses.
  10. TOP each glass with several blueberries.
  11. DIVIDE lemonade between glasses.
  12. TOP with seltzer water, if desired.
  13. SERVE Blueberry Mint Lemonade immediately.
