Blackberry Breakfast Grilled Cheese Waffle

Grilled cheese is not just for lunch anymore. Enjoy this easy combination of blackberries, mascarpone, apricot and waffles for a hearty breakfast sandwich.

Ingredients
- 1/2 Cup mascarpone
- 1/2 Cup apricot preserves
- 1 Package (6 ounces) Driscoll's Blackberries
- 8 frozen purchased waffles, thawed
Directions
- PREHEAT a sandwich press or large skillet to medium heat.
- ARRANGE 4 waffles on work surface.
- SPREAD 2 tablespoons mascarpone over each waffle.
- SPREAD 2 tablespoons apricot preserves over each waffle.
- PLACE 1/2 cup blackberries onto each waffle in a single layer.
- COVER each sandwich with 1 waffle and PRESS DOWN firmly.
- COOK sandwiches in sandwich press about 3 minutes or until warmed through. (If using a skillet, FLIP sandwiches midway through cooking.)
- SERVE immediately.
