• 8 frozen purchased waffles, thawed
  • 1/2 Cup mascarpone
  • 1/2 Cup apricot preserves
  • 1 Package (6 ounces) Driscoll's Blackberries
  1. PREHEAT a sandwich press or large skillet to medium heat.
  2. ARRANGE 4 waffles on work surface.
  3. SPREAD 2 tablespoons mascarpone over each waffle.
  4. SPREAD 2 tablespoons apricot preserves over each waffle.
  5. PLACE 1/2 cup blackberries onto each waffle in a single layer.
  6. COVER each sandwich with 1 waffle and PRESS DOWN firmly.
  7. COOK sandwiches in sandwich press about 3 minutes or until warmed through. (If using a skillet, FLIP sandwiches midway through cooking.)
  8. SERVE immediately.
