Ingredients
- 1 ½ Cup coconut cream
- 3 Tablespoons maple syrup
- 1 Tsp. vanilla extract
- 5 Tablespoons chia seeds
- 2 Packages (6 ounces each) Driscoll’s Blackberries, divided
- 1 Tbsp. fresh lemon juice
- 1 Cup (9 ounces) vanilla coconut milk yogurt
- Mint leaves
Directions
- POUR 1 ½ cups coconut cream into a tall Mason jar or into a medium bowl.
- ADD 3 tablespoons maple syrup and ADD 1 teaspoon vanilla extract.
- ADD 5 tablespoons chia seeds and STIR well until thoroughly mixed.
- ALLOW chia mixture to rest 10 minutes.
- STIR again.
- COVER chia mixture and CHILL in refrigerator overnight.
- PLACE 1 package blackberries into a small bowl.
- ADD 1 tablespoon fresh lemon juice.
- MASH blackberries using a potato masher or fork until smooth.
- DIVIDE blackberry mixture evenly between 4 cocktail tumblers.
- DIVIDE chia mixture evenly between tumblers.
- ADD 1/4 cup vanilla coconut milk yogurt to each tumbler.
- DIVIDE remaining package blackberries evenly between tumblers.
- GARNISH parfaits with mint leaves as desired.
- SERVE immediately.
