Whole Wheat Almond Waffles with Mixed Berry Sauce

Almond flour (which is basically ground almonds) adds flavor and tenderness to these whole wheat waffles. They're low in fat and perfect topped with a simple berry sauce. Use a mix of all three berries or pick your favorites. Make the berry sauce one day ahead if you like.

Ingredients
- 2 1/2 Cups Driscoll's Berries (Blackberries, Blueberries and/or Raspberries)
- 1/2 Cup orange juice
- 1 Tbsp. sugar
- 1 1/2 Teaspoons cornstarch
- 1 1/4 Cups whole wheat flour
- 1/2 Cup almond flour
- 1 Tbsp. sugar
- 2 Teaspoons baking powder
- 1/2 Tsp. salt
- 1 Cup low-fat (1%) milk
- 1/4 Cup canola oil
- 3/4 Tsp. almond extract
- 2 large eggs
Directions
- Combine 2 cups berries, orange juice, sugar and cornstarch in a small saucepan. Bring to a boil over medium-high heat; boil 1 minute, stirring constantly. Remove from heat and stir in remaining 1/2 cup berries. Keep warm until ready to serve.
- Preheat a lightly greased waffle iron until hot.
- Mix whole wheat flour, almond flour, sugar, baking powder and salt in a medium bowl until combined. Whisk together milk, oil, eggs and almond extract. Whisk flour mixture into egg mixture just until combined.
- Cook waffles according to manufacturer's instructions. Serve with warm mixed-berry sauce.
