Strawberry Sweet Rolls

Ingredients
Jam
- 1 tablespoon water
- 2 teaspoons cornstarch
- 1 package (16 ounces) Driscoll’s Strawberries
- 2 tablespoons granulated sugar
Dough
- 1 cup milk, at room temperature
- 1 teaspoon active dry yeast
- 1/2 cup granulated sugar
- 1 large egg
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 4 cups all-purpose flour
- 1/2 cup heavy cream
Frosting
- 1/2 package (8 ounces) cream cheese, at room temperature
- 8 ounces mascarpone, at room temperature
- 1/2 cup powdered sugar
- 1/4 cup heavy cream
Directions
Jam
- POUR 1 tablespoon water into a small bowl.
- ADD 2 teaspoons cornstarch.
- STIR to combine and SET ASIDE cornstarch mixture.
- STEM 1 package (16 ounces) strawberries and PLACE into a saucepan.
- ADD 2 tablespoons granulated sugar.
- COOK over high heat about 10 minutes and STIR and SMASH until strawberries are pureed.
- STIR cornstarch mixture and ADD to strawberry mixture.
- BRING mixture to a boil and STIR constantly until thickened, 2 – 3 minutes.
- SET ASIDE strawberry jam.
Dough
- BUTTER or COAT with cooking spray a large rectangle baking dish and SET ASIDE.
- PLACE 1 cup room temperature milk into a large bowl or the bowl of a stand mixer fitted with the paddle attachment.
- ADD 1 teaspoon active dry yeast.
- STIR to combine and ALLOW to rest until bubbly, about 5 minutes.
- ADD 1/2 cup granulated sugar.
- ADD 1 large egg.
- ADD 2 tablespoons vegetable oil.
- ADD 1 teaspoon salt.
- STIR until thoroughly combined.
- ADD 2 cups all-purpose flour and STIR just until combined.
- ADD remaining 2 cups all-purpose flour.
- KNEAD about 8 minutes until smooth.
- COVER with a dry cloth and ALLOW dough to rest in a warm place about 2 hours until doubled in size.
- LIGHTLY FLOUR a work surface.
- TURN OUT dough onto work surface.
- ROLL dough to a large rectangle about 1/2 inch thick.
- SPREAD 3/4 of strawberry jam evenly over dough.
- ROLL dough starting from short edge into a tight roll.
- SLICE roll into 12 pieces about 1 ½ inches thick using a sharp knife.
- PREHEAT oven to 350°F.
- TRANSFER sweet roll pieces to prepared baking dish and ALLOW to rest 30 minutes in a warm place until risen.
- POUR 1/2 cup heavy cream into a medium bowl.
- ADD 2 tablespoons strawberry jam and STIR thoroughly to combine.
- POUR cream mixture over sweet rolls and spread evenly.
- BAKE 25 minutes or until golden brown.
Frosting
- PLACE 1/2 package (8 ounces) cream cheese into a medium bowl.
- ADD 8 ounces mascarpone cheese.
- ADD remaining strawberry jam.
- ADD 1/2 cup powdered sugar.
- ADD 1/4 cup heavy cream.
- STIR thoroughly to combine.
- SPREAD frosting over sweet rolls and SERVE immediately.
