Strawberry Shortcake Overnight Oats

Ingredients
- 1/2 Cup rolled oats
- 1/2 Cup milk
- 1/4 Cup coconut yogurt
- 1/3 Cup chopped Driscoll’s Strawberries
- 1/3 Cup Driscoll’s Blueberries
- 1 Tbsp. chia seeds
- Granola for garnish
- 1/4 Tsp. vanilla extract
- 1 Tbsp. maple syrup
- Half of 1 package (16 ounces) Driscoll’s Strawberries, hulled and sliced
- 2 Tablespoons maple syrup
- 2 Tablespoons chia seeds
Directions
- PLACE 1/2 cup oats into a 12-ounce mason jar.
- ADD 1/2 cup milk, 1/4 cup coconut yogurt, 1/4 teaspoon vanilla extract, 1 tablespoon maple syrup, 1/3 cup chopped strawberries, 1/3 cup blueberries, and 1 tablespoon chia seeds.
- MIX well and ENSURE oats are completely covered.
- REFRIGERATE at least 4 hours or overnight.
- PLACE half of package of strawberries into a medium saucepan.
- COVER saucepan with lid and COOK over high heat 2-3 minutes or until strawberries begin to break down.
- REMOVE lid.
- ADD 2 tablespoons maple syrup and 2 tablespoons chia seeds.
- ALLOW mixture to come to a boil.
- REDUCE heat to medium-high.
- MASH strawberries using a potato masher or immersion blender.
- REDUCE heat to medium and SIMMER for an additional about 5-8 minutes while STIRRING occasionally.
- ALLOW mixture to cool somewhat.
- TRANSFER mixture carefully to a mason jar.
- COVER jar with lid and REFRIGERATE overnight or until set.
- SERVE overnight oats garnished with strawberry chia seed jam, sliced strawberries, and your favorite granola.
