Strawberry Matcha Tiramisu

This Strawberry Matcha Tiramisu blends the earthy flavor of matcha with sweet strawberry whipped cream and soft ladyfingers. Easy to prepare and stunning to serve, it's the perfect make-ahead dessert for spring and summer gatherings.

Ingredients
- 10 Driscoll’s Strawberries, divided
- 1/3 cup plus 1 teaspoon sugar, divided
- 1 teaspoon lemon juice
- 1 cup heavy cream
- 8 ounces mascarpone
- 1 ½ cups water
- 1 tablespoon plus 1/2 teaspoon matcha powder, divided
- 1 package ladyfinger cookies
Directions
- STEM and PLACE 5 strawberries into a blender.
- ADD 1 teaspoon sugar.
- ADD 1 teaspoon lemon juice.
- BLEND until strawberries are pureed.
- SET ASIDE strawberry puree.
- POUR 1 cup heavy cream into a large bowl or the bowl of a stand mixer fitted with the whisk attachment.
- ADD remaining 1/3 cup sugar.
- WHISK until stiff peaks form.
- ADD strawberry puree.
- ADD 8 ounces mascarpone.
- FOLD gently until no streaks remain. Do not overmix.
- SET ASIDE strawberry cream.
- POUR 1 ½ cups water into a small saucepan.
- COOK over high heat until boiling and REMOVE from heat.
- ADD 1 tablespoon matcha powder, STIR until no clumps.
- ALLOW matcha tea to cool to room temperature.
- DIP each ladyfinger cookie into matcha tea 1 – 2 seconds and SET ASIDE.
- ARRANGE half of dipped ladyfinger cookies in a single layer on the bottom of a glass serving dish.
- SPREAD half of strawberry cream evenly over ladyfinger cookies.
- ARRANGE remaining ladyfinger cookies over strawberry cream.
- SPREAD remaining strawberry cream over ladyfinger cookies.
- COVER serving dish tightly with plastic wrap and refrigerate 4 – 5 hours or up to overnight.
- DUST with 1/2 teaspoon matcha powder.
- STEM and SLICE remaining 5 strawberries and GARNISH dessert.
- SERVE immediately.
