Ingredients
- 1 package (16 ounces) Driscoll's Strawberries
- 1 cup water
- 1/4 cup sugar
- 1/4 cup fresh lime juice
- 3 tablespoons tequila
- 2 tablespoons orange liqueur, such as triple sec
- 1/4 teaspoon coarse salt (optional)
- Popsicle sticks
Directions
- HULL 1 package (16 ounces) strawberries.
- SLICE strawberries into quarters and SET ASIDE.
- POUR 1 cup water into a medium saucepan.
- ADD 1/4 cup sugar.
- ADD sliced strawberries.
- BRING to a boil over high heat.
- REDUCE heat to low and ALLOW to simmer about 5 minutes until sugar is dissolved.
- ALLOW strawberry syrup to cool completely.
- PLACE strawberry syrup into a blender and MIX on high until pureed.
- STRAIN strawberry puree through a fine mesh sieve into a large spouted pitcher and DISCARD solids.
- ADD 1/4 cup fresh lime juice.
- ADD 3 tablespoons tequila.
- ADD 2 tablespoons orange liqueur.
- STIR to combine.
- TASTE strawberry mixture and adjust ingredients as desired.
- DIVIDE strawberry mixture between the wells of a popsicle mold.
- CHILL in freezer about 2 hours.
- SPRINKLE 1/4 teaspoon coarse salt over popsicle wells (optional).
- INSERT 1 popsicle stick into each well.
- RETURN popsicles to freezer and ALLOW to chill until frozen solid, about 12 hours.
- SERVE immediately.
