Strawberry Coconut Margarita

Ingredients
- 1.5 oz. tequila
- .5 oz. triple sec
- .75 oz. lime juice
- 1.5 oz. coconut milk
- 1 oz. strawberry puree (from about ½ cup of strawberries)
- 5 oz. simple syrup
- Pinch of salt
- A few drops of agave syrup
- 1 tbsp. coconut flakes
- 3-4 strawberries for skewering, sliced longways
- 1 toothpick

Make it!
- PUREE strawberries in a blender until smooth and then strain through a fine mesh sieve.
- HEAT a pan over medium and add coconut flakes.
- TOAST until golden, remove from the pan immediately, and spread out on a small plate.
- Once cooled, paint agave around the rim or side of the glass and ROLL in toasted coconut flakes.
- PLACE glasses in the freezer to allow the coconut to really set into the agave syrup.
- SKEWER a few strawberry slices on a toothpick, alternating the direction of the strawberries and set aside.
- COMBINE tequila, triple sec, lime juice, coconut milk, strawberry puree, simple syrup and salt into a cocktail shaker.
- STIR until combined and add a handful of ice.
- SHAKE vigorously for 25 seconds.
- DOUBLE strain over fresh ice.
