Strawberries and Cream Puff Pastry Tarts

Ingredients
- 1 tablespoon cornstarch
- 1 tablespoon plus 1 teaspoon water, divided
- 1 package (16 ounces) Driscoll’s Strawberries, divided
- 1 cup plus 3 tablespoons sugar, divided
- 1 large egg
- 1 teaspoon water
- 1 sheet purchased puff pastry
- 1 ½ cups heavy cream
- 1 teaspoon vanilla bean paste or vanilla extract
Directions
- PREHEAT oven to 425°F.
- LINE a baking sheet with parchment paper.
- PLACE 1 tablespoon cornstarch into a small bowl.
- ADD 1 tablespoon water.
- STIR to combine and SET ASIDE cornstarch mixture.
- STEM 1 package (16 ounces) strawberries.
- SET ASIDE 8 strawberries.
- DICE remaining strawberries.
- PLACE diced strawberries into a saucepan.
- ADD 1 cup sugar.
- COOK over medium heat and STIR and MASH until mixture begins to boil.
- REDUCE HEAT to low.
- COOK and STIR occasionally 5 –10 minutes until somewhat thickened.
- STIR cornstarch mixture and ADD to strawberry mixture.
- INCREASE heat to high and STIR constantly until mixture comes to a boil and becomes very thick.
- ALLOW strawberry mixture to cool to room temperature.
- CRACK 1 large egg into a small bowl.
- ADD remaining 1 teaspoon water.
- WHISK thoroughly and SET ASIDE egg mixture.
- LIGHTLY FLOUR a worksurface.
- PLACE 1 sheet purchased puff pastry onto work surface.
- ROLL OUT puff pastry sheet to a square using a rolling pin.
- CUT puff pastry sheet into 8 equal squares.
- LIGHTLY SCORE boarders inside each puff pastry square about 1/2 inch from edges using a paring knife.
- LIGHTLY BUSH egg mixture over puff pastry squares.
- BAKE 10 minutes or until golden and puffed.
- SET ASIDE puff pastry squares to cool to room temperature.
- POUR 1 ½ cups heavy cream into a large mixing bowl or into the bowl of a stand mixer fitted with the whisk attachment.
- ADD remaining 3 tablespoons sugar.
- ADD 1 teaspoon vanilla bean paste or vanilla extract.
- WHISK until stiff peaks form and SET ASIDE whipped cream.
- PRESS DOWN center of each puff pastry square with the back of a spoon.
- SPOON strawberry mixture onto centers of puff pastry squares.
- SPREAD or PIPE whipped cream onto puff pastry squares.
- SLICE reserved strawberries and GARNISH puff pastry squares.
- SERVE immediately.
