Ingredients
- 4 ounces herbed goat cheese
- 1/4 cup heavy cream
- 1 package water crackers or table crackers
- 2 heads endive
- 1 pink lady apple or honey crisp apple
- 1 package (6 ounces) Driscoll's Raspberries
- 2 tablespoons honey
- 1/4 cup pistachios, shelled and chopped
Directions
- PLACE 4 ounces herbed goat cheese into a small bowl.
- ADD 1/4 cup heavy cream.
- USE a fork to STIR until evenly combined.
- TRANSFER goat cheese mixture to a piping bag fitted with a star tip or to a small sandwich bag.
- SET ASIDE goat cheese mixture.
- ARRANGE water crackers or table crackers on a serving platter.
- PLACE 1 endive leaf onto each cracker.
- CORE 1 pink lady apple or honey crisp apple and SLICE into thin wedges about a quarter inch thick.
- PLACE 1 apple slice onto each endive leaf.
- PIPE 3 stars of goat cheese mixture onto each leaf.
- PLACE 3 raspberries onto each leaf.
- DRIZZLE honey over each leaf.
- GARNISH with chopped pistachio nuts.
- SERVE immediately or STORE in refrigerator for up to 1 hour before serving.
