Raspberry Mint 'Nice' Cream

Ingredients
- 2 Packages (6 ounces each) Driscoll’s Raspberries
- 1 Cup full-fat coconut milk
- Optional: 1/4 cup dark chocolate chunks
- 3 Tablespoons agave nectar or honey
- 2 bananas, sliced and frozen
- 4-5 fresh mint leaves, finely chopped
Directions
- PLACE raspberries into a blender.
- ADD coconut milk.
- ADD agave or honey.
- BLEND on high speed until berries are liquefied.
- ADD half of frozen banana slices.
- BLEND again on high speed until mixture swirls easily inside blender.
- ADD remaining banana slices.
- BLEND again on high speed until mixture swirls easily inside blender.
- POUR mixture into a mixing bowl.
- ADD mint.
- ADD chocolate chunks (if using).
- FOLD gently to incorporate ingredients.
- TRANSFER nice cream to a bread pan.
- CHILL in freezer for several hours or until firm.
- ALLOW to soften slightly before serving.
