Ingredients
- 2 tablespoons pine nuts
- 1 tablespoon dry bread crumbs
- 2 tablespoons champagne vinegar or white balsamic vinegar
- 2 tablespoons sugar
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 2 packages (6 ounces) Driscoll’s Raspberries
- 4 ounces goat cheese
- 4 ounces cream cheese
Directions
- PREHEAT oven to 400°F.
- PREHEAT skillet over medium heat.
- CHOP 2 tablespoons pine nuts.
- PLACE chopped pine nuts into hot skillet and SHAKE pan continuously.
- CONTINUE cooking and SHAKING pan until pine nuts are golden brown.
- REMOVE from heat and ADD 1 tablespoon dry bread crumbs.
- SET ASIDE pine nut mixture to cool.
- POUR 2 tablespoons champagne vinegar or white balsamic vinegar into a medium bowl.
- ADD 2 tablespoons sugar and ADD 1 tablespoon honey.
- ADD 1 tablespoon olive oil.
- ADD 1/8 teaspoon salt and ADD 1/8 teaspoon black pepper.
- WHISK to combine.
- ADD 2 packages (6 ounces) raspberries.
- FOLD gently until berries are evenly covered with dressing.
- SET ASIDE berry mixture.
- PLACE 4 ounces goat cheese into a medium bowl.
- ADD 4 ounces cream cheese.
- USE a fork to STIR until thoroughly combined.
- SET ASIDE cheese mixture.
- LINE a medium bowl with plastic wrap and ALLOW edges of plastic wrap to hang over sides of bowl.
- TRANSFER cheese mixture to plastic lined bowl and PRESS mixture downward to form a disk.
- INVERT bowl onto oven proof plate or shallow baking dish.
- REMOVE bowl and PEEL AWAY plastic wrap to UNMOLD cheese.
- PRESS and PAT pine nut mixture into top and sides of cheese.
- BAKE 10 minutes or until lightly browned. Use caution as plate or baking dish will be hot.
- SPOON berry mixture over warm cheese.
