No-Bake Mini Vegan Strawberry Cheesecake Bites

Ingredients
- 1 1/2 Cups roasted unsalted cashews
- 2 Cups water, boiling
- 2 Cups shortbread cookies (10-15 cookies)
- 1 1/4 Cups coconut oil, melted, divided
- 1/2 Cup coconut cream
- 2 Teaspoons vanilla extract
- 1/8 Tsp. sea salt
- Additional strawberries for garnish
- Toasted sliced almonds for garnish
- 1 Package (16 ounces) Driscoll’s Strawberries, hulled and chopped
- 6 Tablespoons maple syrup, divided
- 2 Tablespoons fresh lemon juice
Directions
- PLACE cashews in a mason jar or large heatproof bowl.
- POUR boiling water over cashews until they are completely covered.
- COVER TIGHTLY with plastic wrap.
- SOAK cashews for four hours or overnight.
- COMBINE strawberries, 1 tablespoon maple syrup, and lemon juice in a medium-sized saucepan.
- SIMMER strawberry mixture over low heat until berries release their juices WHILE MASHING berries every few minutes.
- PRESS strawberry sauce through a fine strainer to remove pulp and seeds.
- ALLOW strawberry sauce to cool.
- GREASE a mini cheesecake pan.
- MIX cookie crumbs and ¼ cup coconut oil together in a medium bowl until well combined.
- DIVIDE cookie mixture between wells of cheesecake pan.
- PRESS crust into bottom of wells with a tart tamper or fingertips.
- PLACE cheesecake pan in freezer until crusts harden.
- DRAIN water from cashews.
- PLACE cashews and remaining 1 cup coconut oil into a blender.
- BLEND cashew mixture on low speed, gradually increasing to high speed, for 2-3 minutes.
- ADD strawberry sauce, remaining 5 tablespoons maple syrup, coconut cream, vanilla, and salt.
- BLEND again on low speed, gradually increasing to high speed, for 2-5 additional minutes or until mixture is completely smooth.
- REMOVE cheesecake pan from freezer.
- DIVIDE cheesecake filling between wells of cheesecake pan.
- TAP pan gently against countertop to smooth cheesecakes.
- CHILL for several hours or overnight.
- GARNISH with fresh sliced strawberries and toasted almonds.
- SERVE immediately.
