No-Bake Blueberry Oatmeal Bars

So, what do you do when you need a healthy, 3 o'clock pick-me-up? Reach for something pure, naturally sweet, and convenient like these no-bake blueberry oat bars. They're great at the office, home, or school!

Ingredients
- 1 Cup almonds, chopped
- 2 Cups quick-cook rolled oats
- 1/3 Cup protein powder
- 1/2 Cup dried, unsweetened cranberries
- 1/8 Tsp. salt
- 1/3 Cup nut butter of choice
- 1/2 Cup honey
- 1 Package (6 ounces) Driscoll's Blueberries
Directions
- LINE an 8-inch square baking dish with plastic wrap and ALLOW plastic wrap to hang over edges and SET ASIDE.
- PLACE 1 cup chopped almonds into a skillet.
- COOK over medium heat and STIR frequently 5 – 10 minutes or until lightly toasted.
- SET ASIDE toasted almonds to cool.
- PLACE 2 cups quick-cook rolled oats into a large bowl.
- ADD 1/3 cup protein powder.
- ADD toasted almonds.
- ADD 1/2 cup dried, unsweetened cranberries.
- ADD 1/8 teaspoon salt.
- STIR to combine ingredients.
- ADD 1/3 cup nut butter of choice.
- ADD 1/2 cup honey.
- STIR thoroughly to combine.
- FOLD IN 1 package (6 ounces) blueberries. Do not over mix.
- PRESS oat mixture into prepared baking dish.
- FOLD plastic tightly over oat mixture and USE additional plastic wrap if necessary to COVER oat mixture.
- REFRIGERATE 1 hour or until firm.
- CUT into 12 bars or squares.
- SERVE immediately or WRAP each bar tightly in plastic wrap and REFRIGERATE until using.
