Dubai Chocolate Strawberry Parfait

Delicious and indulgent yet simple and healthy, our take on the viral Dubai Chocolate is a parfait with a perfect balance of textures and flavors. Layers of creamy yogurt, crunchy toasted kataifi, pistachio butter, rich dark chocolate, and of course juicy Driscoll’s Strawberries! Kataifi is made from thin stings of dough cooked on a rotating griddle. Look for it at your local Mediterranean grocer, or substitute with chopped shredded wheat cereal.

Ingredients
- 5 – 6 Driscoll’s Strawberries
- 2 tablespoons kataifi, fresh or frozen or dry
- 1 tablespoon unsalted butter, if using dry kataify
- 1 tablespoon pistachio butter or pistachio cream
- 2 tablespoons (1 ounce) dark chocolate
- 1/2 cup Greek yogurt
- 1 tablespoon pistachios, optional
Directions
- PREHEAT skillet over medium-low heat.
- STEM STEM and SLICE 5 – 6 strawberries.
- SET ASIDE sliced strawberries.
- CHOP 2 tablespoons kataifi into 2-inch pieces.
- ADD 1 tablespoon unsalted butter to skillet if using dry kataifi.
- PLACE kataifi pieces into hot skillet.
- COOK and STIR frequently until golden brown, about 5 minutes.
- ALLOW kataifi to cool to room temperature.
- ADD 1 tablespoon pistachio butter or pistachio cream.
- STIR gently until coated and SET ASIDE kataifi mixture.
- PLACE 2 tablespoons (1 ounce) dark chocolate into a heat proof bowl.
- MELT chocolate over simmering water or in microwave in short bursts.
- SET ASIDE melted chocolate.
- PLACE 1/4 cup Greek yogurt into a cocktail tumbler or serving dish.
- TAP tumbler gently on countertop to form an even layer.
- ADD half of kataifi mixture.

- DRIZZLE with half of melted chocolate.
- REPEAT steps to form two layers.
- CHOP 1 tablespoon pistachios (if using) and sprinkle over parfait.
- SERVE immediately.
