Caramelized Strawberry Creamsicles Easy Homemade Popsicle

Ingredients
- 1 Tbsp. water
- 1 Tsp. cornstarch
- 2 Tablespoons unsalted butter
- 1 Package (16 ounces) Driscoll’s Strawberries, hulled and diced into 1/4-inch pieces
- 1/4 Cup light brown sugar
- 1/4 Cup honey
- 1/4 Tsp. salt
- 3/4 Cup whole milk
- 1/2 Cup plain or vanilla Greek yogurt
Directions
- POUR 1 tablespoon water into a small bowl.
- ADD 1 teaspoon cornstarch.
- STIR until cornstarch is completely suspended in water.
- SET ASIDE cornstarch mixture.
- MELT 2 tablespoons butter in a medium saucepan.
- ADD 1 package strawberries, diced into 1/4-inch pieces.
- TOSS ingredients and ENSURE strawberries are evenly coated with butter.
- COOK 2 minutes over medium heat.
- ADD 1/4 cup brown sugar, 1/4 cup honey, and 1/4 teaspoon salt.
- COOK uncovered and STIR occasionally until liquid is reduced and thickened, 12 – 15 minutes.
- STIR cornstarch mixture again and ADD to strawberry mixture.
- BRING mixture to a boil and COOK until thickened, about 2 minutes.
- ALLOW strawberry mixture to cool completely.
- POUR 3/4 cup whole milk into a large spouted measuring cup.
- ADD 1/2 cup plain or vanilla Greek yogurt.
- STIR to combine ingredients.
- ADD strawberry mixture and STIR until mixture is evenly pink.
- DIVIDE mixture evenly between 8 – 10 popsicle molds.
- FREEZE at least 6 hours or up to overnight.
- SERVE immediately or store in freezer until needed.
