Blueberry Pancakes and Waffles
Ingredients
- 1 1/2 Cups white whole wheat flour
- 2 Tablespoons sugar
- 1 1/2 Teaspoons baking powder
- 3/4 Tsp. baking soda
- 1 1/2 Teaspoons ground cinnamon
- 1/2 Tsp. salt
- 1 1/4 Cups buttermilk
- 3 Tablespoons canola oil
- 2 Packages (6 ounces each) Driscoll's Blueberries
- Maple syrup
- 2 large eggs
Directions
- PREHEAT waffle iron until hot.
- PLACE eggs into a medium bowl.
- WHISK eggs thoroughly.
- ADD buttermilk and oil.
- WHISK again until smooth.
- SET ASIDE egg mixture.
- PLACE flour into a medium bowl.
- ADD sugar, baking powder, baking soda, cinnamon, and salt.
- STIR to combine ingredients.
- POUR flour mixture into egg mixture.
- WHISK batter just until evenly combined. Do not over mix.
- COAT waffle iron lightly with cooking spray.
- COOK one waffle according to manufacturer's instructions.
- DRIZZLE waffle with maple syrup.
- TOP waffle with blueberries.
- REPEAT with remaining waffle batter.
- SERVE immediately.
