Blueberry White Chocolate Brownies

Ingredients
- 3 packages (6 ounces each) Driscoll’s Blueberries
- 1 cup plus 1 tablespoon granulated sugar, divided
- 12 tablespoons (1 ½ sticks) unsalted butter
- 8 ounces white chocolate, chopped
- 3 large eggs
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 3/4 cup plus 2 tablespoons all-purpose flour
Directions
- PREHEAT oven to 350°F degrees.
- LINE a 9-inch x 9-inch baking dish with parchment paper.
- PLACE 2 ½ packages (6 ounces each) blueberries into a medium saucepan and RESERVE remaining 1/2 package blueberries for later.
- ADD 1 tablespoon granulated sugar to saucepan.
- MASH blueberries briefly with a potato masher or the back of a large spoon.
- COOK over medium heat and MASH and STIR occasionally until thickened, 5 – 10 minutes.
- SET ASIDE blueberry mixture.
- CUT 12 tablespoons (1 ½ sticks) unsalted butter into cubes.
- STIR cubed butter into blueberry mixture until completely melted.
- SET ASIDE blueberry mixture to cool slightly.
- MELT 8 ounces chopped white chocolate over a double boiler or in a microwave in short intervals of heating and stirring.
- SET ASIDE melted chocolate to cool slightly.
- CRACK 3 large eggs into a large bowl or into the bowl of a stand mixer fitted with the whisk attachment.
- ADD remaining 1 cup granulated sugar.
- ADD 1/4 cup brown sugar.
- ADD 1 teaspoon vanilla extract
- ADD 1/2 teaspoon salt
- WHIP until very light and fluffy, about 3 minutes.
- ADD blueberry mixture to egg mixture and WHIP until thoroughly combined.
- ADD melted chocolate to egg mixture and WHIP until thoroughly combined.
- ADD 3/4 cup plus 2 tablespoons all-purpose flour and STIR gently until no patches of flour remain.
- POUR batter into prepared baking dish.
- SPRINKLE reserved blueberries over batter.
- BAKE 40 – 45 minutes or until mixture is slightly wobbly in center.
- ALLOW to cool completely inside baking dish.
- CHILL 1 – 2 hours.
- SLICE into squares.
- SERVE immediately.
