Blueberry Feta Salad

Ingredients
Chicken (optional)
- 2 large chicken breasts
- 3/4 cup purchased lemon garlic marinade
- 1/2 cup walnuts
- Half of 1 package (6 ounces) Driscoll’s Blueberries
- 1/3 cup olive oil
- 3 tablespoons balsamic vinegar
- 2 teaspoons honey
- 2 teaspoons Dijon mustard
- Juice from 1/2 medium lemon
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 11 ounces mixed greens
- Half of 1 package (6 ounces) Driscoll’s Blueberries
- 1 medium avocado
- 1 medium cucumber
- 1/2 cup feta
- 1/4 cup fresh parsley

Directions
Chicken
- PLACE 2 large chicken breasts into a medium mixing bowl.
- ADD 3/4 cup purchased lemon garlic marinade.
- TOSS gently until chicken is evenly coated.
- COVER tightly with plastic wrap and REFRIGERATE 3 hours or up to overnight.
- PREHEAT grill to 500°F.
- GRILL chicken about 6 minutes.
- FLIP chicken and GRILL 5 minutes.
- CHECK internal temperature with thermometer and CONTINUE to GRILL until internal temperature is 165°F.
- COVER lightly with foil and SET ASIDE.
Walnuts
- PREHEAT a skillet over medium-low.
- PLACE 1/2 cup walnuts into skillet.
- COOK and STIR frequently 6 – 8 minutes until golden and fragrant.
- SET ASIDE walnuts.
Dressing
- PLACE half of 1 package (6 ounces) blueberries into a blender.
- ADD 1/3 cup olive oil.
- ADD 3 tablespoons balsamic vinegar.
- ADD 2 teaspoons honey.
- ADD 2 teaspoons Dijon mustard.
- ADD juice from 1/2 medium lemon.
- ADD 1/4 teaspoon salt and ADD 1/4 teaspoon pepper.
- BLEND until mixture swirls easily in blender.
- TASTE and ADJUST lemon juice, salt, and pepper to taste.
- SET ASIDE dressing.
Salad
- PLACE 11 ounces mixed greens into a large mixing bowl.
- ADD half of 1 package (6 ounces) blueberries.
- SLICE and ADD 1 medium avocado.
- SLICE and ADD 1 medium cucumber.
- CRUMBLE and ADD 1/2 cup feta.
- FINELY CHOP and ADD 1/4 cup fresh parsley.
- TOSS to combine.
- DIVIDE salad between 4 plates.
- SPRINKLE walnuts over salads.
- SLICE chicken breasts into thin strips and LAYER onto salads.
- DRIZZLE dressing over salads.
- SERVE immediately.
