Blueberry Bacon Brie Grilled Cheese

Ingredients
Quick jam
- 1 teaspoon cornstarch
- 1 tablespoon water
- 1 package (6 ounces) Driscoll’s Blueberries, divided
- 1/3 cup sugar
- 1 teaspoon lemon zest
- 1 teaspoon fresh lemon juice
Sandwich
- 2 slices bacon
- 1 tablespoon unsalted butter
- 2 slices sourdough bread, thick-cut
- 3 slices brie cheese
- 3 tablespoons shredded cheese such as white cheddar, Emmental, or fontina
- 4 – 5 fresh basil leaves
Directions
Quick jam
- PLACE 1 teaspoon cornstarch into a small bowl.
- ADD 1 tablespoon water.
- STIR to combine and SET ASIDE cornstarch mixture.
- PLACE half of 1 package (6 ounces) blueberries into a saucepan.
- ADD 1/3 cup sugar.
- ADD 1 teaspoon lemon zest.
- ADD 1 tablespoon fresh lemon juice.
- COOK over medium heat and STIR and MASH occasionally until blueberries are pureed and mixture is reduced by one third, about 10 minutes.
- STIR cornstarch mixture and ADD to blueberry mixture.
- COOK over medium high heat and STIR constantly until mixture boils and becomes very thick.
- ALLOW mixture to cool somewhat.
- ADD remaining half of 1 package (6 ounces) blueberries.
- STIR to combine and REFRIGERATE quick jam until needed.
Sandwich
- PREHEAT oven to broil.
- COOK 2 slices bacon to desired doneness and SET ASIDE.
- PLACE 1 tablespoon unsalted butter into a large ovenproof skillet.
- COOK over medium heat and SWIRL skillet to distribute butter.
- PLACE 2 slices thick cut sourdough bread into skillet and PRESS DOWN lightly.
- COOK until golden, about 1 minute.
- SPREAD quick jam over each bread slice.
- ARRANGE 3 slices brie cheese onto one bread slice.
- PLACE 3 tablespoons shredded cheese such as white cheddar, Emmental, or fontina onto to second bread slice.
- TRANSFER skillet to oven.
- COOK just until cheeses melt and begin to bubble slightly.
- REMOVE from heat.
- ARRANGE cooked bacon on one bread slice.
- ARRANGE 4 – 5 fresh basil leaves on second bread slice.
- CLOSE sandwich.
- SERVE immediately.
