Blackberry Mojito with Vodka

It’s hard to improve on the classic mojito. But adding fresh blackberries brings a rich complexity and a nice balance of flavors. Be sure to muddle the mint leaves gently to prevent any bitterness. A wooden spoon can be used in place of a muddler.

Ingredients
- 12 Large mint leaves
- 4 Teaspoons sugar
- 1-2 Tablespoons lime juice
- 15 Driscoll's Blackberries
- 1/2 Cup seltzer water or club soda
- 2 Ounces (about 1/4 cup) white rum
- Ice
- 1 Lime wheel
Directions
- PLACE 12 large mint leaves into a tall glass.
- ADD 4 teaspoons sugar.
- ADD 1 – 2 tablespoons lime juice.
- MASH gently with a muddler or spoon until mint is wilted and most of the sugar is dissolved.
- SET ASIDE mint mixture.
- PLACE 12 blackberries into a small bowl.
- MASH with a large spoon or potato masher.
- PRESS blackberry puree through a fine mesh strainer and DISCARD seeds.
- ADD blackberry puree to mint mixture.
- ADD 1/2 cup seltzer water or club soda.
- ADD 2 ounces (about 1/4 cup) white rum.
- STIR well.
- ADD ice.
- GARNISH with 1 lime wheel and additional whole blackberries.
- SERVE immediately.
