Goat Cheese Endive Bites with Fresh Raspberries

Ingredients

4 ounces herbed goat cheese

1/4 cup heavy cream

1 package water crackers or table crackers

2 heads endive

1 pink lady apple or honey crisp apple

1 package (6 ounces) Driscoll's Raspberries

2 tablespoons honey

1/4 cup pistachios, shelled and chopped


Directions

PLACE 4 ounces herbed goat cheese into a small bowl.

ADD 1/4 cup heavy cream.

USE a fork to STIR until evenly combined.

TRANSFER goat cheese mixture to a piping bag fitted with a star tip or to a small sandwich bag.

SET ASIDE goat cheese mixture.

ARRANGE water crackers or table crackers on a serving platter.

PLACE 1 endive leaf onto each cracker.

CORE 1 pink lady apple or honey crisp apple and SLICE into thin wedges about a quarter inch thick.

PLACE 1 apple slice onto each endive leaf.

PIPE 3 stars of goat cheese mixture onto each leaf.

PLACE 3 raspberries onto each leaf.

DRIZZLE honey over each leaf.

GARNISH with chopped pistachio nuts.

SERVE immediately or STORE in refrigerator for up to 1 hour before serving.
