Blueberry Mint Lemonade Recipe

Simple syrup is a combination of water and sugar cooked until the sugar dissolves. It is handy to have around for making a batch of clear lemonade. Make more than you need and keep in the refrigerator for cocktails or to sweeten iced coffee or tea.

INGREDIENTS

  • 1/2 cups sugar
  • 1/2 cups water
  • 1/2 cups lightly packed fresh mint leaves
  • 1 cups fresh lemon juice
  • 1 1/2 cups cold water
  • 1 package (6 ounces) Driscoll's Blueberries
  • 1 cups ice cubes
  • Seltzer water (optional)

Lighten Up Tip

  • Lighten up the recipe by substituting sugar-free sweetener in place of sugar.

Instructions

  1. Combine sugar, water and mint leaves in a small saucepan.
  2. Bring to a simmer and stir until sugar dissolves. Remove from heat and let cool.
  3. Strain mint syrup into a tall pitcher. Stir in lemon juice and water.
  4. Fill 4 tall glasses with ice cubes and top with one-fourth of the blueberries.
  5. Add mint lemonade and top with seltzer water, if desired.
