• 2 Cups mixed Driscoll's Berries (Blackberries, Blueberries and/or Raspberries)
  • 1/3 Cup plus 2 tablespoons sugar, divided
  • 2 Tablespoons quick-cook tapioca
  • 1 Package (14.1 ounces) purchased double pie crust (2 rounds of dough)
  • 1 Tbsp. milk
  • 2 Teaspoons ground cinnamon
  • 1 large egg
  • 1-2 Tbsp. Flour
  1. PREHEAT oven to 350°F.
  2. LINE a rimmed baking sheet with parchment paper or silicone baking mat.
  3. PLACE one round of pie dough onto a lightly-floured surface.
  4. CUT OUT six Christmas tree shapes using a medium-large Christmas tree cookie cutter.
  5. ALTERNATIVELY: use a sharp knife or pizza cutter to CUT dough into six wedges as with a pizza and TRIM bottoms to create tree stumps.
  6. CUT OUT star shapes from dough scraps using a small star cookie cutter.
  7. SET ASIDE dough stars.
  8. TRANSFER dough trees to cookie sheet.
  9. CRACK 1 egg into a small bowl and WHISK egg thoroughly.
  10. ADD 1 tablespoon milk and WHISK egg mixture again to combine ingredients.
  11. BRUSH egg mixture lightly around border of each dough tree.
  12. PLACE second round of dough onto a lightly-floured surface.
  13. CUT out six more Christmas tree shapes.
  14. DUST a rolling pin lightly with flour.
  15. ROLL dough tree tops gently with rolling pin to make them slightly larger than tree bases.
  16. CUT steam vents into dough trees using a ravioli cutter or sharp knife to look like garland.
  17. CUT small holes into dough trees using a plastic drinking straw to look like ornaments.
  18. SET ASIDE decorated top crusts.
  19. PLACE 2 cups mixed berries into a medium bowl.
  20. CUT any large berries into smaller pieces.
  21. ADD 1/3 cup sugar and 2 tablespoons tapioca.
  22. STIR berry mixture gently to combine ingredients.
  23. SPOON berry filling onto center of each tree base while LEAVING a 1/2-inch border around each.
  24. LAY top crusts over bottoms crusts.
  25. CRIMP edges of trees using fork tines held at a 45° angle to look like tree branches.
  26. BRUSH pies lightly with egg mixture.
  27. DECORATE trees with dough stars.
  28. BRUSH dough stars lightly with egg mixture.
  29. PLACE remaining 2 tablespoons sugar into a small bowl.
  30. ADD 2 teaspoons cinnamon and STIR sugar mixture to combine ingredients.
  31. DUST pies with cinnamon sugar.
  32. BAKE 20 to 25 minutes or until golden brown.
  33. ALLOW pies to cool slightly on pan.
  34. TRIM away any berry juice that has bubbled around edges of pies and TRANSFER pies to cooling rack.
  35. ALLOW pies to cool completely.
  36. SERVE Christmas Tree Berry Hand Pies immediately or store at room temperature until ready to use.
