Grilling is the new way to serve everyone's favorite: pizza! Choose any combination of fresh Driscoll’s berries plus your favorite blend of goat cheese, feta cheese, fresh mint, or fresh basil. Make your own quick pizza dough or buy it from your local pizzeria or grocery store.

Ingredients

PIZZA DOUGH

1 ¾ cups bread flour

2 teaspoons olive oil

1 ½ teaspoons instant yeast

1 teaspoon sugar

1 teaspoon salt

2/3 cup warm water

PIZZA

1 (16 ounce) purchased pizza dough or 1 pizza dough, at room temperature

2 – 3 tablespoons balsamic vinegar glaze

4 ounces goat cheese or 6 ounces feta cheese, crumbled

2 cups mixed Driscoll’s Strawberries, Raspberries, Blackberries or Blueberries

2 tablespoons chopped fresh mint or fresh basil


Directions

PIZZA DOUGH

LIGHTLY OIL a large mixing bowl and SET ASIDE.

PLACE 1 ¾ cups bread flour into a food processor.

ADD 2 teaspoons olive oil.

ADD 1 ½ teaspoons instant yeast.

ADD 1 teaspoon sugar.

ADD 1 teaspoon salt.

PULSE to combine ingredients.

PROCESS CONTINUOUSLY while SLOWLY ADDING about 2/3 cup warm water.

CONTINUE PROCESSING about 45 seconds or until dough comes together into a rough ball.

TRANSFER dough to countertop.

KNEAD 3 – 4 times until a tight ball is formed.

TRANSFER dough to prepared mixing bowl and TURN dough to COAT all sides lightly with oil.

COVER tightly with plastic wrap.

ALLOW dough to rest in a warm place until doubled in volume.

 

PIZZA

PREHEAT a medium-hot fire in an outdoor charcoal grill and ALLOW coals to burn until white ashes form on surface and you can hold your hand just above grate for about 3 seconds.

(OR PREHEAT on high an outdoor gas grill and REDUCE heat to medium high (about 450°F.))

(OR PREHEAT indoor oven to broil.)

SPRINKLE lightly with all-purpose flour a large upturned baking sheet.

PLACE pizza dough onto baking sheet and PAT and STRETCH dough into a 12-inch diameter circle.

COVER loosely with plastic wrap and ALLOW to rest on countertop 10 – 20 minutes until dough is relaxed and somewhat risen.

SHAKE baking sheet to ensure dough is not sticking and ADD additional all-purpose flour if needed.

SLIDE pizza dough carefully onto grill.

COOK 3 – 5 minutes on outdoor grill or until underside of dough is toasted and shows blackened grill marks.

(OR COOK 3 – 5 minutes in indoor oven until top side of dough is bubbly and shows blackened marks.)

TURN OVER pizza dough.

DRIZZLE 2 – 3 tablespoons balsamic vinegar glaze over pizza.

SPREAD 4 ounces goat cheese or SPRINKLE 6 ounces feta cheese over pizza.

SPRINKLE 2 cups assorted Driscoll’s berries over pizza. (STEM and CORE and SLICE strawberries if using.)

CLOSE oven and BAKE 3 – 5 minutes longer until dough is cooked through and berries are warm but not oozing.

TRANSFER pizza to serving platter.

PRESS berries gently into cheese to secure.

SPRINKLE 2 tablespoons chopped fresh mint or basil over pizza.

SLICE pizza into 8 wedges.

SERVE immediately.
