Description:
You'll delight in this refreshing cocktail blend of raspberry simple syrup, mint, lime and Cachaça, a Brazilian liquor similar to rum (feel free to substitute rum if you don't have Cachaça). Garnish with a fresh sprig of mint.

Ingredients

Raspberry Simple Syrup

  • 1/2 packages of a 6 ounce package Driscoll's Raspberries
  • 1/2 cups sugar
  • 1/2 cups water

Cachaça

  • 8 to 10 Driscoll's Raspberries
  • 4 large mint leaves
  • 6 tablespoons Raspberry Simple Syrup
  • 1/2 cups ice cubes
  • 6 tablespoons white rum or cachaça
  • 1 1/2 teaspoons fresh lime juice
  • 2 tablespoons lemon-lime soda

Raspberry Simple Syrup

  1. Combine 1/2 package raspberries, sugar and water in a small saucepan. Bring to a boil, stirring until sugar dissolves and berries soften. Cool. Strain and press berries to release juice. Discard pulp.

To Prepare

  1. Muddle raspberries, mint leaves, raspberry simple syrup in a cocktail glass using a muddler or flexible spatula.
  2. Add ice, white rum and lime juice. Top with soda. Stir and serve.
