Strawberry Ice Cocktail Recipe

Blended strawberry-lime ice cubes are a great way to flavor a cocktail. Delicious with wine or as a non-alcoholic drink, extra cubes can be used in other drinks like lemonade, iced tea or sparkling wine.

INGREDIENTS

  • 1 package Driscoll's Strawberries (16 ounces or about 3 cups), plus more for garnish
  • 1/2 cups fresh lime juice
  • 1/4 cups sugar
  • Lemon-lime soda, chilled
  • Gewurtztraminer or Riesling wine (optional), chilled
  • Lime slices and strawberries for garnish

Instructions

  1. Hull strawberries. Combine strawberries, lime juice and sugar in a blender and purée until smooth. Pour mixture into 2 ice cube trays. Freeze 2 to 4 hours or until frozen solid.
  2. To serve, place 3 to 4 strawberry cubes in a glass. Top with lemon-lime soda, or equal parts soda and choice of wine. Garnish with a strawberry and lime slice. Serve with a stir-stick.
  3. Note: Freeze leftover strawberry cubes in a freezer bag or container. Use in place of ice cubes in soda, seltzer or lemonade.

Lighten Up Tip

  1. Lighten up the recipe by replacing the sugar and soda with an equivalent amount of sugar substitute and diet soda.
